In this appetizer, two types of honey serve two distinct purposes: Mellow, slightly spicy clover honey intensifies the sweetness of the tangy tomatoes as they slowly roast. After the bruschetta is assembled, a drizzle of robust buckwheat honey balances the creamy ricotta cheese.
We enjoy our bruschetta in the summer. We use all the fresh ingredients from our garden like tomato, basail, and thyme. One of these days I'm going to make my own ricotta, too! I have not tried this recipe but it sure sounds good! Next summer, when the garden is ripe, I will let you know how this tastes!
